Chorizo and Fromager d’Affinois Double Cream cheese madeleines
– 180 g ( 1 1/2 cup) of flavour – 50 g (1/2 cup) of milk
– 6 g (1 tsp) of baking powder – 50 g (2 oz) of mild chorizo sausage
– 100 g (1 cup) of Fromager d’Affinois – salt
– 3 whole eggs
Preheat the oven to 230°C.
Finely dice the cheese and chorizo sausage.
Mix the flour, baking powder, eggs, milk and a pinch of salt together in a bowl.
Add the cheese and chorizo sausage using a spatula.
Pour the batter into mini-madeleine moulds, to 3/4 height, then bake the madeleines in the oven for around 5 minutes (or until they start to turn golden brown).
Remove from moulds and serve warm as an appetizer.
