Bacon and Fromager d’Affinois Bleu Scones

Ingredients
- 2 1/4 c. All purpose flour
- 2 1/2 tsp baking powder
- 3 tbsp granulated sugar
- Large pinch salt
- 8 tbsp unsalted butter, frozen, grated
- 1 c. bacon, cooked and crumbles
- 1/2 c. scallions, diced
- 7-8 oz Fromager d’Affinois Bleu, cubed
- 1/2 c. Whole milk, or 2% is okay
- 1 egg
- 1 egg yolk
- 2 tbsp heavy cream, for brushing
Directions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Carefully grate the frozen butter into the flour mix. Then using your fingertips to work the butter into the flour until it looks crumbly.
- Stir in diced scallions and chopped bacon.
- Cut in large chunks of the Fromager d’Affinois Bleu cheese and stir until coated with flour.
- In a small bowl, whisk together milk and eggs. Stir until just combined (I find that after initially using a spatula, that my hands work better for mixing. If the mix is too sticky, add a little flour a tbsp at a time).
- Lightly flour the counter and turn out dough. Form into a 10” disc about 1” thick. Then cut into 8 equal slides.
- Put each scone on a parchment lined baking sheet and put in freezer for 20 minutes.
- Preheat oven to 400F.
- Once oven is preheated, take the scones out of the freezer. Brush each with a little heavy cream.
- Bake for 10 minutes and then reduce the temperature to 350F and cook another 17-19 minutes. Scones should be browned lightly on top and bottoms.
- Cool 5-10 minutes before serving.
Makes 8 large scones.
