Bacon and Fromager d’Affinois Bleu Scones

Ingredients

  • 2 1/4 c. All purpose flour
  • 2 1/2 tsp baking powder
  • 3 tbsp granulated sugar
  • Large pinch salt
  • 8 tbsp unsalted butter, frozen, grated
  • 1 c. bacon, cooked and crumbles
  • 1/2 c. scallions, diced
  • 7-8 oz Fromager d’Affinois Bleu, cubed
  • 1/2 c. Whole milk, or 2% is okay
  • 1 egg
  • 1 egg yolk
  • 2 tbsp heavy cream, for brushing

Directions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. Carefully grate the frozen butter into the flour mix. Then using your fingertips to work the butter into the flour until it looks crumbly.
  3. Stir in diced scallions and chopped bacon.
  4. Cut in large chunks of the Fromager d’Affinois Bleu cheese and stir until coated with flour.
  5. In a small bowl, whisk together milk and eggs. Stir until just combined (I find that after initially using a spatula, that my hands work better for mixing. If the mix is too sticky, add a little flour a tbsp at a time).
  6. Lightly flour the counter and turn out dough. Form into a 10” disc about 1” thick. Then cut into 8 equal slides.
  7. Put each scone on a parchment lined baking sheet and put in freezer for 20 minutes.
  8. Preheat oven to 400F.
  9. Once oven is preheated, take the scones out of the freezer. Brush each with a little heavy cream.
  10. Bake for 10 minutes and then reduce the temperature to 350F and cook another 17-19 minutes. Scones should be browned lightly on top and bottoms.
  11. Cool 5-10 minutes before serving.
    Makes 8 large scones.
