Fromager d’Affinois Truffle Raviolis

Ingredients

  • For the pasta dough:
    • 1.5 cups all-purpose flour
    • 2 egg yolks
    • 1.5 tbsp. olive oil
    • 2 tbsp. water
  • For the filling:
    • 4.5 oz. Fromager d’Affinois Truffle
    • 3 cloves garlic
    • Salt and pepper to taste

Directions

For the pasta dough :

  1. Place flour in a food processor bowl. Create a well in the center.
  2. Add egg yolks, olive oil, and water to the well.
  3. Mix on low speed using a dough hook attachment until the mixture forms a sandy-textured dough.
  4. Transfer the dough to a floured work surface and knead by hand for 15 minutes.
  5. Form the dough into a ball, wrap it, and let it rest for 30 minutes.

Shape the ravioli :

  1. Roll out the rested dough on a floured work surface using a rolling pin until thin.
  2. Use a cookie cutter to cut out circles from the flattened dough.

For the filling :

  1. Finely chop 3 cloves of garlic.
  2. Pan-fry the chopped garlic with 4.5 oz. Fromager d’Affinois Truffle cheese.
  3. Season the mixture with salt and pepper to taste.

Prepare to serve :

  1. Place a portion of the cheese filling in the center of half of the dough circles.
  2. Top each filled circle with a second dough circle and seal the edges to form ravioli.
  3. Bring a large pot of water to a simmer.
  4. Cook the ravioli in the simmering water for 10 minutes.
  5. Serve immediately and enjoy!
