Fromager d’Affinois Truffle Raviolis
Ingredients
- For the pasta dough:
- 1.5 cups all-purpose flour
- 2 egg yolks
- 1.5 tbsp. olive oil
- 2 tbsp. water
- For the filling:
- 4.5 oz. Fromager d’Affinois Truffle
- 3 cloves garlic
- Salt and pepper to taste
Directions
For the pasta dough :
- Place flour in a food processor bowl. Create a well in the center.
- Add egg yolks, olive oil, and water to the well.
- Mix on low speed using a dough hook attachment until the mixture forms a sandy-textured dough.
- Transfer the dough to a floured work surface and knead by hand for 15 minutes.
- Form the dough into a ball, wrap it, and let it rest for 30 minutes.
Shape the ravioli :
- Roll out the rested dough on a floured work surface using a rolling pin until thin.
- Use a cookie cutter to cut out circles from the flattened dough.
For the filling :
- Finely chop 3 cloves of garlic.
- Pan-fry the chopped garlic with 4.5 oz. Fromager d’Affinois Truffle cheese.
- Season the mixture with salt and pepper to taste.
Prepare to serve :
- Place a portion of the cheese filling in the center of half of the dough circles.
- Top each filled circle with a second dough circle and seal the edges to form ravioli.
- Bring a large pot of water to a simmer.
- Cook the ravioli in the simmering water for 10 minutes.
- Serve immediately and enjoy!
