Egg muffin with Fromager d’Affinois Truffle

Ingredients
- 8 large eggs
- 3 tablespoons milk
- 1 teaspoon dijon mustard
- ½ teaspoon dried parsley
- Salt and pepper, to taste
- 6 to 8 tablespoons Fromager d’Affinois Truffle, chopped into small pieces
- 3 green onions, finely chopped
Directions
- Preheat the oven to 350ºF. Spray the muffin tin with cooking spray.
- Whisk the eggs and add the milk, dijon, parsley, salt, and pepper. Whisk well.
- Add the Fromager d’Affinois Truffle cheese and green onions and mix.
- Scoop the egg mixture and pour it in a muffin tin, until it almost reaches the top.
- Bake in the oven for 20-25 minutes. Take the egg cups out of the oven and let them cool on a cooling rack for a couple of minutes. Serve!
