Egg muffin with Fromager d’Affinois Truffle

Ingredients

  • 8 large eggs
  • 3 tablespoons milk
  • 1 teaspoon dijon mustard
  • ½ teaspoon dried parsley
  • Salt and pepper, to taste
  • 6 to 8 tablespoons Fromager d’Affinois Truffle, chopped into small pieces
  • 3 green onions, finely chopped

Directions

  1. Preheat the oven to 350ºF. Spray the muffin tin with cooking spray.
  2. Whisk the eggs and add the milk, dijon, parsley, salt, and pepper. Whisk well.
  3. Add the Fromager d’Affinois Truffle cheese and green onions and mix.
  4. Scoop the egg mixture and pour it in a muffin tin, until it almost reaches the top.
  5. Bake in the oven for 20-25 minutes. Take the egg cups out of the oven and let them cool on a cooling rack for a couple of minutes. Serve!
