Smoked Ham Sandwich by Chef Pierre Raberin

Ingredients

Pistachio-Infused Olive Oil :

  • Pistachio paste
  • Pistachios
  • Extra virgin olive oil

To Assemble and Serve :

  • Fresh baguette, sliced lengthwise
  • Thinly sliced smoked ham
  • Fromager d’Affinois Truffle cheese

Directions

  • For the Pistachio-Infused Olive Oil : 

In a blender, purée desired amount pistachio paste and pistachios. With the machine running, slowly stream in oil, blending until mixture is fully emulsified. Transfer to a squeeze bottle and refrigerate.

  • To Assemble and Serve : 

On a clean work surface, drizzle Pistachio-Infused Olive Oil on both sides of bread. On bottom half, layer desired amount smoked ham and Fromager d’Affinois Truffle brie. Close sandwich and serve.
