It all starts with the highest-quality French cow’s milk, spiked with extra cream, which gives the cheese an additional richness and a higher butterfat percentage. As it ripens, the pudgy, cheesecake-like center begins to melt into a texture akin to rich ice cream. Its palette-filling paste has notes of button mushroom, cream, and lemon zest, and is the perfect canvas for any cheese board.
